Foodie Friday - Mini Chocolate Trifles

M and I have never really been into New Years Eve so our first as husband and wife was fairly low key. We ended up watching the first Harry Potter movie and eating cheese and crackers for dinner. I wanted to make him something special for dessert so I modified this recipe to make mini chocolate trifles based around M's favourite dessert - my chocolate brownies.
Mini Chocolate Trifles (serves 4)

  • Batch of your favourite brownie recipe ( I have a recipe that I use but M wants me to keep it as a Warren secret. If you don't have your own recipe, the Donna Hay packet mix is quite good as you want quite a fudgy brownie) 
  • 250g thickened cream, whipped 
  •  Chocolate mousse (you can use pre-made or my recipe is below) 
  •  Berries & flaked chocolate for topping 

method
1. Cut brownie in half and squish into the bottom of a glass. You want it to go right up against the edges so use how ever much you need to for each glass.
2. Layer a generous helping of chocolate mousse on top.
3. Layer whipped cream on top again.
4.  Pop one more layer of mousse and then finish with a layer of whipped cream. Top with berries and flaked chocolate then pop in fridge. This can be eaten straight away or left to set for a while if you like.

it's quite a rich dessert, but it lends itself quite well to experimentation.  Next time, M wants me to pop a layer of raspberry jelly after the first one of cream, to see how that tastes.

Chocolate Mousse (courtesy of George Calombaris)

  • 150g good quality dark cooking chocolate ( i use cadburys) 
  • 100mL extra virgin olive oil 
  • 250g thickened cream, whipped 

method
Gently melt the chocolate in a bowl standing over a pot of simmering water. Once melted, stir in the olive oil. Whip the cream to soft peaks and then add to the melted chocolate and olive oil. Eat straight away, or pop in the fridge to set a little.
